The Best Sausage and Super Mash with Onion Gravy

Today’s dinner was a Jamie Oliver recipe. Here’s his version:

Cumberland sausages sadly being in short supply here, we had to substitute breakfast sausages. (What are breakfast sausages? What makes them particularly suitable for the morning?) Anyway, our version was fairly similar, although we should have had more patience with the onions:
